Titanium develops hot spots if you crank the flame - the standard advice is a low-to-medium flame and a lid. If your customers really cook (stews, pasta, rice), aluminum is easier; if they mostly boil water, the difference is seconds and titanium's weight saving matters more.
Safety and lifespan: titanium's quiet advantages
Bare aluminum reacts with acidic food such as tomato sauces and citrus, and can pit over time; hard-anodized aluminum solves this with a coating that can wear or chip. Grade 1 titanium needs no coating at all - it is chemically inert, leaves no metallic taste, and fire discoloration is purely cosmetic. A titanium pot that outlives three aluminum ones is arithmetic, not marketing.
